I am working at home today, so i decided to start making room in my refrigerator. There were some beets that needed tending to in bottom drawer.
My kids gave me this lovely electric roasting pan as a gift. So, I scrubbed the beets, and put them on the rack. I placed it on the porch and plugged it in. It took about 45 minutes at 400 degrees. After they cooled, I slipped their little jackets off to feed to the chickens. Then I cut them up, coated them with olive oil, salt and pepper. Now they are chilling out in the fridge to go with salads.
