Thyme leaves are too much trouble to work with.
But remembering that, I make a thyme bundle when I season a pot of something- First, I rinse the thyme and tie the whole stems into bundles with kitchen string. I then place them in a long shallow plastic container with water, and top that with a paper towel The wet paper towel is heavy and forces the thyme to stay under water. The next day I pop them out into a labeled freezer bag.
Now, when I need a thyme bundle, I can either thaw it out or just plop the frozen block into the pot. The string keeps it in a bundle so that you can remove the thyme stems before serving.
Now we both have time for thyme.
